Banana Pancake Recipe

I’ve had very little sleep thanks to hot/cold spells and occasional pain through the night and I’ve got a very busy day today, so it’s only a short post this morning…

As promised here is the recipe for my very simple and delicious Banana Pancakes. I’m sorry I can’t remember where I found this recipe but it was somewhere online.

All you need to make them are some ripe (or almost ripe) bananas and some eggs, it’s that easy!

Combine 2 bananas with 2-4 eggs (depending on the size of the eggs) and mix, either by hand or with food processor/blender, until the texture of pancake mix.

Spoon mixture into a fry pan over medium heat with a little oil (I use coconut oil) and cook until bubbles start appearing.

Flip and cook on the other side. I tend to make them small, like in the photo above, so that they’re easier to flip.

Plate up and enjoy. You can have these with honey, nut butter, or normal butter but I find they’re delicious just as they are most the time.

That’s it! A very simple, healthy, delicious meal that you can use for breakfast or for dessert.
